Mediterranean Baked Cod

4-6 Cod fillet pieces (about 1.5 lbs)

5 garlic cloves, minced

1/4 cup fresh parsley, chopped

5 tbsp fresh lemon juice

5 tbsp The Shoreline Vine Gremolata Infused Olive Oil

1 1/2 tbsp The Shoreline Vine Butter Infused Olive Oil

1/3 cup Almond Flour

1 tsp ground coriander

3/4 tsp sweet paprika

3/4 tsp ground cumin

3/4 tsp salt

1/2 tsp black pepper

2 tbsp The Shoreline Vine Extra Virgin Olive Oil

Preheat oven to 400 degrees

Mix lemon juice, Gremolata Infused Olive Oil and Butter Infused Olive Oil in a shallow bowl; set aside.

In another shallow bowl combine almond flour, spices, salt and pepper. Pat the fish fillets dry. Dip fish in the lemon juice mixture and then in the flour mix. Shake off the excess flour. In a cast iron skillet, heat the extra virgin olive oil over medium-high heat. Add fish and sear on each side to give it some color (but not fully cooked); Approximately 2 minutes per side. Remove from the heat. Take the remaining lemon juice mixture and add the minced garlic and drizzle over the fish fillets. Bake in the oven until the fish begins to flake easily with a fork. Approximately 10-11 minutes. Remove from the oven and top with freshly chopped parsley and drizzle with additional lemon juice if desired.

Serve over rice or roasted vegetables.
