Lemon Pepper Chicken

1 1/2 lbs boneless skinless chicken breasts
1 Tbsp lemon pepper seasoning
1 tsp garlic powder
1 Tbsp The Shoreline Vine Avocado Oil, Extra Virgin
Olive Oil or Lemon Fused Olive Oil
3 Tbsp melted butter
1/4 cup chicken broth
2 Tbsp freshly squeezed lemon juice
2 tsp lemon zest
Sea salt and ground pepper, to taste
1 Tbsp fresh chopped parsley

Preheat oven to 400 degrees
Rub the chicken breast with lemon pepper and garlic
powder.
Heat oil in a large heavy oven-proof skillet over
medium heat. Sear the chicken for 2-3 minutes a side
or until golden brown. Add the butter, broth and
freshly squeezed lemon juice and zest.
Raise the heat a little and bring the liquid to a boil.
Transfer the skillet to the oven and roast for 12-15
minutes or until the chicken reads 165 degrees F.
Remove from the oven and sprinkle with fresh parsley
and lemon slices.
