Grilled Watermelon & Halloumi Kebabs
2 cups watermelon cubed 1/4 cup The Shoreline Vine Habañero & Honey Dark Balsamic Fresh cracked pepper and salt to taste *Halloumi is a semi-hard unripened cheese made from
2 cups *Halloumi cheese cubed
Fresh mint leaves, chopped Kebab Skewer
a mixture of goat and sheep milk. It’s texture is described as squeaky. It has a high melting point and can be fried or grilled. Sometimes its referred to as “the grilling cheese”

On each skewer, alternately thread the watermelon and halloumi. Drizzle each with olive oil and season with salt and pepper. On a preheated grill, place the kebabs and char for about 1 minute. Flip and char on the other side for 30-40 seconds. After you get the desired char marks remove the kebabs and place on a platter. Drizzle the balsamic vinegar over them and sprinkle fresh chopped mint over top
