Garlic and Herb Potato Salad
3 lbs baby red potatoes, washed and quartered 1/3 cup The Shoreline Vine Extra Virgin Olive Oil, Rosemary, Tuscan Herb, or Herbes De Provence Infused Oils 2-4 tbsp either The Shoreline Vine Balsamico Bianco (plain) or Grapefruit White Balsamic Vinegar 4 garlic cloves, minced 1 tsp salt 1/2 tsp freshly ground pepper 1/3 cup your choice of mixed herbs, (finely chopped), flat leaf parsley, thyme, rosemary, dill, chives

Bring potatoes to a boil in salted water. Reduce heat to medium and allow to simmer for approximately 10-12 minutes; until fork tender. Drain and rinse under cold water. Spread out onto a baking sheet and allow to completely cool. Meanwhile, mix together olive oil, balsamic, garlic, salt, pepper and mixed herbs. Transfer the cooled potatoes to a serving bowl. Pour dressing over top and gently toss to evenly coat. Season to taste with additional salt, pepper or herbs, if desired.
