Chipotle-Lime Shrimp Wraps

1 lb medium shrimp, peeled and deveined

2 tsp ground cumin

3-4 tbsp The Shoreline Vine Lime White Balsamic Vinegar

1 tbsp The Shoreline Vine Chipotle Infused Olive Oil

2 garlic cloves, minced

Handful of cilantro, chopped (plus more for garnish)

Kosher salt and fresh ground pepper, sprinkle of each

2 tbsp The Shoreline Vine Extra Virgin Olive Oil

Romaine lettuce

Avocado, sliced thin

1/4 cup sour cream (optional)

Squeeze of fresh lime juice over top

In a large mixing bowl, whisk together: cumin, lime vinegar, chipotle oil, minced garlic, cilantro, salt and pepper. Add in the shrimp and mix together until the shrimp is covered in the marinade. Let sit for 10 minutes. Over medium-high heat add the extra virgin olive oil and sauté the shrimp for approximately 2-3 minutes per side; until pink. Remove from the heat and start to assemble the wrap. Add shrimp to romaine leaves and top with avocado, a drizzle of sour cream, and a squeeze of fresh lime juice. Garnish with more cilantro, if desired.
