Baked Garlic Parmesan Fries

4 large Russet Potatoes; cut into 1/4” strips
1/4 cup The Shoreline Vine Extra Virgin Olive Oil or any
infused oil of your choice.
3 garlic cloves, minced
1/2 tsp ground dried thyme
1/2 tsp seasoned salt, divided
3/4 cup grated Parmesan cheese
1/4 cup fresh chopped parsley

Preheat oven to 425 degrees
In a large mixing bowl season the potato strips with olive oil,
garlic, dried thyme, 1/4 tsp salt. Toss until evenly coated.
Remove potatoes from the bowl and spread out evenly on a
nonstick baking sheet. Set aside the remaining oil/seasoning.
Bake for 30 minutes flipping them over at the 15 minute mark
to ensure evenly cooking. Remove from the oven and place
back into the bowl; add 1/2 cup parmesan cheese and parsley.
Toss to coat and place back on the baking sheet. Continue to
cook for approximately 10 more minutes until cheese is
melted and they are golden brown. Remove from the oven and
top with remaining cheese and additional seasoning if desired.
