Wild Rice Salad with Cranberries and Pine Nuts

Ingredients

1 cup wild rice, cooked and rinsed

1 & 1/2 teaspoon kosher saltunnamed.jpg

2/3 cup dried cranberries, roughly chopped

1/2 cup thinly sliced celery

1 crisp apple, peeled and diced

1/2 cup minced parsley

1/4 cup pine nuts

 

Citrus Vinaigrette

Grated zest of 1 lemon

1 teaspoon of fresh lemon juice

Graded zest from 1 orange

1/2 cup fresh orange juice

2 tablespoons The Shoreline Vine Cranberry Pear White Balsamic, Champagne Vinegar, or Raspberry Vinegar.

1 tablespoon finely minced shallot

2 tablespoons honey

1/4 cup The Shoreline Vine Extra Virgin Olive Oil

1/2 to 1 teaspoon kosher salt

Directions

Cook the wild rice per package directions, rinse and allow it to cool.  In a large serving bowl, combine the cooled grains and cranberries with the celery, apple and parsley.  In a small bowl, whisk together all of the vinaigrette ingredients.  Add the dressing to the salad and mix well: garnish with nuts.  Serve at room temperature.
