Spiced Lentils topped with Chipotle Infused Olive Oil
1 cup of red or yellow lentils 4 cups of water a pinch of turmeric 1 inch piece of ginger-chopped 1 teaspoon cumin seeds 2 garlic cloves-sliced 2-3 dried red chilis 3 tablespoons of The Shoreline Vine Extra Virgin Olive Oil 1 cup halved cherry tomatoes 1/4 cup chopped cilantro 1 tablespoon of The Shoreline Vine Chipotle Infused Olive Oil (As much as your heart desires) Optional
Bring 4 cups of water, 1 cup of red or yellow lentils, a pinch of turmeric, and a 1 inch piece of chopped ginger to a boil; simmer for 15 to 20 minutes. Whisk vigorously and season with salt.
In a skillet heat 3 tablespoons of Extra Virgin Olive Oil over medium high heat. Cook 1 teaspoon of cumin seeds, 2 garlic cloves and 3 dried red chilis in the skillet for 2 minutes. Add 1 cup of halved cherry tomatoes and cook for one minute. Stir into the lentils and add the chopped cilantro. Drizzle Chipotle Infused Olive Oil on top. Enjoy!
