Chili-Spiced Sweet Potato Wedges
Ingredients 4 sweet potatoes 2 tbsp extra virgin olive oil salt & pepper to taste 3 tbsp of softened butter 1 tsp of harissa infused olive oil (or any spicy oil of your choice like chipotle or baklouti green chili) 1 clove of grated garlic zest of 1 lime handful of chopped chives
Cut the sweet potatoes into wedges and toss with olive oil, salt and pepper. Place on baking sheet and bake for 20 to 25 mins at 425 degrees (flipping once, until browned)
Mix the butter with the spiced oil together. Add garlic, lime zest and pinch of salt. Toss the potatoes in the mixture and sprinkle in the chives. Serve with lime wedges.
