Brussels Sprouts with Walnut Lemon Vinaigrette

 

1 lb Brussels Sprouts

2 tbsp Walnut Oil 

1 tbsp Minced Shallot

¼ tbsp. fresh grated lemon zest

1 tbsp lemon juice

1 teaspoon whole grain or Dijon mustard

¼ teaspoon salt

pepper to taste

   

Steam Brussels Sprouts in steamer or in large saucepan over 1 inch of boiling water for 7-8 mins

 

Whisk oil, shallot, lemon zest, lemon juice, mustard, salt & pepper in a med sized bowl.

 

Add sprouts to dressing, toss to coat.
