Shrimp Fajitas with Grapefruit-Lime Slaw
½ tsp kosher salt ½ tsp paprika ¼ tsp garlic powder ¼ tsp ground cumin ½ tsp ground red pepper flakes ¾ pound large shrimp (peeled) 3 tablespoons of extra virgin olive oil-divided 1 ½ cups of red peppers 2 cups sliced onions 1 jalapeno pepper, sliced and seeded (optional) Sour Cream (optional) 8 6-inch flour tortillas Lime wedges
Mix the salt, paprika, garlic powder, cumin & pepper flakes together. Add shrimp to coat. Heat 1 ½ tbsp of extra virgin olive oil in pan over med-high heat. Add shrimp and cook for about 4 minutes (or until shrimp is done). Remove Add remaining 1 ½ tbsp of oil to pan. Stir in onions and cook for about 2 minutes. Add the red bell pepper and continue to cook for approximately 4 minutes or until softened. Remove from heat and add shrimp to combine.
Top tortillas with shrimp mixture (jalapenos & sour cream if desired) Squeeze lime over top & serve!
¼ cup mayonnaise 2 tablespoons of Grapefruit White Balsamic 2 tablespoons of Persian Lime Infused Oil 1 tsp of sugar ½ tsp of kosher salt 4 cups shredded coleslaw mix ¼ cup fresh cilantro-chopped
Whisk together mayo, balsamic, oil, sugar and salt. Toss in coleslaw and top with cilantro.
