Black Bean and Mushroom Burgers
2 tbsp The Shoreline Vine Extra Vigin Olive Oil 1 onion, finely chopped 6 oz of portabella mushrooms, finely chopped 2 cloves of garlic, minced ½ tsp. ground cumin 1 15 oz can of black beans, cooked ½ cup fresh cilantro 2 oz crumbled goat cheese (optional) 4 slices of toasted or stale bread, processed into crumbs Salt and pepper to taste 6 hamburger buns Top with salsa, avocado & tomatoes if desired.
Preheat grill medium-hot fire.
In a skillet on the stove, sauté onions in 1 tbsp olive oil, until golden brown. Add mushrooms, garlic & cumin. Cook until the mushrooms have released their juices-about 5 minutes. Spoon the mixture into a food processor. Add the beans & cilantro and pulse. You want it mixed but still chunky. Put mixture into a bowl and stir in goat cheese and bread crumbs. Season with salt & pepper.
Form into patties. Brush both sides of the patties with the remaining olive oil so they don’t stick to the grill. Grill until crisp and heated through-approximately 5 minutes a side.
Put in a bun and top with all of your favorite fixings!
